Disable collectors

### Problem Statement Hello, First off—great project! Looking at the docs: https://github.com/cloudeteer/m365-exporter/blob/main/docs/m365-exporter-config.yaml, it seems like it’s possible to disable specific services from being scraped, like OneDrive and Teams. However, I couldn’t find where these values are actually being used in the code. Is it currently possible to enable or disable individual collectors?
