Feat: use `vim.fn.stdpath` instead `$HOME`

Updated all path usage with `vim.fn.stdpath` instead of `$HOME` this allows for this plugin to work on Windows without the user need to create the `$HOME` environment variable, which most windows users wouldn't have; Fixes #8
