fix: make deep copy of default settings arrays

Hi, there was an issue I identified with the default settings due to passing array by reference. Occassionally, this would lead to overwriting the default settings array properties, particularly when `data.json` does not exist. This hinders functionality of the reset defaults button. Would be great if you can review and add this to the new release. Thanks!
