Nextcloud 31 missing

Nextcloud 31 was added to nixpkgs recently, however the CI isn't currently generating the json files for it. Since the NEXTCLOUD_VERSIONS are is inferred from the current available nextcloud versions in nixpkgs, which appears to come from a vendored go package and it wasn't clear what the policy is for updating the vendored go dependencies, I am raising an issue instead of a PR.
