Add docker-compose and update documentation

- update the dockerfile; it was failing, so I re-wrote it, changing how the srt lib is compiled and shared. - add a docker-compose, providing an easy way to run it locally with an ffmpeg serving as an SRT listening server. - add a troubleshooting section for people when they're running it locally. - add how data flows documentation
