Allow passing in value for DIRECTORY

Tiny change that allows something like: env DIRECTORY="${HOME}/.pi-apps" ./install I was excited to discover that DIRECTORY is used consistently throughout the repo, thanks for that, regardless of whether you accept this change or not :)
