[matter] add (missing) fan controls for exposition with matter bridge

* Version used: 5.2.0 Hej me again, can you also add the fan controls (and other mssing fan "stuff") that are in matter.js? https://github.com/matter-js/matter.js/blob/main/packages/model/src/standard/resources/fan-control.resource.ts Are they probably already working, but not documented? I do not know how matter.js is included into the bridge... This should also be needed for the AirPurifier I asked for... see: https://github.com/openhab/openhab-addons/issues/21111
