Add languages for OCR

OCR engines provide a list of supported languages not just English. See [OCRmyPDF](https://github.com/ocrmypdf/ocrmypdf#languages) as an example. Currently we don't provide an option to let users choose what languages they want to use. <img width="1720" height="1136" alt="Image" src="https://github.com/user-attachments/assets/f07241ea-8273-4349-bfd0-aec3ea6ed68e" /> We want to add a new OCR preference to let users choose languages that are in the PDF they want to OCR.
