Bug: readthedocs.io url is in the pyproject toml for our minimal package version

In last week's workshop, we noticed that when you create a package using the minimal version, the documentation URL is by default readthedocs. We should remove that from the minimal version as the minimal version doesn't use or provide an option for readthedocs!
